<p>1 Entrecot.<br />
2 Cucharadas de mantequilla.<br />
6 Cucharadas de nata.<br />
Pimienta verde<br />
1 copa de Brandy<br />
Sal.</p>
<p>Preparación:</p>
<p>Se impregna el entrecot con un poco de mantequilla unos minutos:Dorar la mantequilla en la sartén; Echar el entrecot<br />
Flambear la carne con el Brandy<br />
Una vez que veas que le falte muy poco para alcanzar el punto le añades la pimienta verde, la nata y la sal<br />
Dejar minuto más y ya está.</p>
<p>Trucos: Incrustar granos de pimienta troceados en la carne.</p>

			<content:encoded><![CDATA[<p>Estos son algunos consejos generales para asar carne de ternera en una barbacoa o en cualquier plancha o asador.</p>
<p>1. El secreto es una buena carne. Una buena carne hasta permite cometer errores.</p>
<p>2. La carne, a diferencia del pescado, no debe comerse apenas sacrificada. Incluso la caza o aquella que se hace en el campo. Deje al menos 24 horas.</p>
<p>3. Corte. Los mejores cortes argentinos: a) Bife de chorizo, b) Lomo alto y lomo bajo; c) Asado de tira y d) Entraña.</p>
<p>4. Macerar (o marinar). Para variar se puede macerar la carne cubriéndola con cebolla cortada fina, aceite de oliva y pimienta durante 24 horas (no más tiempo). Otras formas de macerar pueden ser con chimichurri o salsas barbacoa ya preparadas.</p>
<p>5. Asado en barbacoa u otro tipo de asador. Lo ideal es poner el fuego muy bajo, de forma que la carne se vaya haciendo muy poco y no se queme. Algunas pistas útiles:</p>
<p>Dos vueltas, lo ideal. Así se evitara que se quede seca.<br />
Hacer la carne despacio.<br />
La carne lejos del fuego y mucho tiempo.<br />
Si es cerca del fuego, el fuego muy suave.<br />
Si la carne tiene mucha grasa el problema es que la grasa arda y se queme. La grasa debe derretirse, no quemarse, para darle sabor a la propia carne. Para eso lejos del fuego, o este sube.</p>
<p>6. La sal se añade en el último momento antes de asar. Utilizar sal gruesa o sal maldón.</p>
<p>7. La carne se debe vigilar hasta que esté al punto que desea cada uno. Hay hasta ocho puntos (desde muy poco hecha hasta muy hecha).</p>
<p>8. La carne debe &#8220;sellarse&#8221; -debe mantener los jugos dentro. Los debe soltar en el plato (sangre y jugos). La carne mantiene mejor su sabor si se come poco hecha. Y para &#8220;sellarla&#8221; lo mejor sería las dos vueltas indicadas.</p>
<p>9. Truco si la carne es dura. Si la carne no te sienta muy bien prueba acompañarla de jugo de papaya, por actuar un componente de la papaya, la &#8220;papaina&#8221;, que favorece la digestión. De aquí surge un truco, si se presume que la carne va a estar dura, se frota un trozo de papaya con la carne. Si sabemos o intuimos previamente que la carne nos puede salir dura, un remedio muy eficaz es congelarla previamente.</p>

<p> Ingredients (4 people): 1/2 K cow meat, cut into thin slices 250 g ham 2 cheeseballs (mozzarella) 3 eggs 1 1/2 glass of tomatoe sauce grated bread 1 spoon of fresh parsley olive oil salt pepper</p>
<p> Steps: 1: Whisk the eggs in a bowl and add the chopped parsley</p>
<p>2: Salt the steaks</p>
<p>3: Drop the steaks into the grated bread, then submerge them in the egg mix and after that, into the grated bread one more time</p>
<p>4: Fry them in a pan, half full with hot oil</p>
<p> 5: Once fried, put the &#8220;milanesas&#8221; on a tray. On top of each one, place some tomatoe sauce, one slice of ham and one of cheese</p>
<p>6: Put the tray into a pre-heated oven at maximum temperature until they gild</p>
<p>7: Serve Tricks: hammer the steaks before preparation</p>
